Middling is betting on both sides of a spread or total at different numbers, creating a window where both bets can win. For example, betting Team A -3 at one book and Team B +5 at another means if Team A wins by 4, both bets cash.
Scalping (sometimes called "dutching" spreads) is similar to middling but focuses on locking in a guaranteed profit by exploiting line differences, even when the middle window is very narrow. The worst case is typically a small loss or breakeven.
